Webinar Summary

Pasteurization no longer requires time, heat, or pressure. This session explores a novel, non-thermal approach to pasteurization that harnesses nanotechnology to prevent microbial spoilage and extend shelf life.

The mechanism of action relies on the interaction between the microbial cell wall and a proprietary nanotextured media, housed within the SHREDDER™. Upon contact with the media, the cell membrane undergoes localized overstretching and subsequent “shredding” due to close-range forces. This mechanical cell lysis occurs independently of external energy inputs and has been observed even under static fluid conditions. Notably, this process achieves stabilization without denaturing proteins or altering the chemical composition of the liquid, effectively preserving the delicate volatile profiles and integrity of the beverage.

We will present data from a series of case studies across a diverse range of beverages. The results demonstrate the efficacy of the nanotextured media across a broad spectrum of common spoilage organisms, including recalcitrant spore-formers. Finally, we will discuss the technical implications of this stabilization method for modern brewing challenges, specifically regarding the unique microbial vulnerabilities of low-alcohol and non-alcoholic (NABLAB) products and the process efficiencies of high-gravity brewing.
