Finishing and Stability
Sapporo has been conducting a wide range of studies regarding beer
foam quality for years. I am going to introduce three topics of our
studies, such as an improvement method for the brewing process, breeding
of barley with superior foam stability performance, and development of a
draft beer dispenser. These studies received the JSBBA (Japan Society
for Bioscience, Biotechnology, and Agrochemistry) Award for Achievement
in Technological Research in 2015.
Takeshi Nakamura studied at the Faculty of Agriculture, Kyoto
University. He joined Sapporo Breweries Ltd. in 1987, and following 27
years of work experience in various breweries, he has been a director in
the Frontier Laboratories of Value Creation since 2014. He is currently
president of the BCOJ (Brewery Convention of Japan).
