When Charlie Bamfroth and Brian Anness delved into brewing yeasts' ability to produce dimethyl sulfide (DMS) in the late 1970s, they were subjected, at best, to raised eyebrows and, at worst, to scorn and derision. Time—and the help of contributions from others—would prove them right. And yet the control of a molecule that can play a profound role in the quality of lagers is a much bigger story, and one that brings in characters as diverse as an expert on pet food flavor, a cricketer, and a sex therapist. In this session, the colorful story of DMS is told.
