This new short course will provide craft brewers with a comprehensive overview of the science behind the malting process. Taught by experts in the field, they will cover malt analysis, malt biochemistry, using specialty malts for flavor and color, malting barley variety development, and the importance of sourcing and choosing the right barley for your finished product.
The afternoon of the first day will be spent touring the Rahr Malting Company’s.malthouses followed by an evening reception courtesy of Rahr.
At the end of this course participants will be able to:
- Understand the malting process
- Understand how specialty malts affect flavor and color
- Distinguish the different varieties of barley and their impact on the final product
