Recovery of selected volatile fusel oils that can be condensed out of beer fermentation off-gas has been carried out using recyclable high boiling point extractants (HBEs). Prescreening of potential HBEs was aided through the use of an extractant screening program (ESP). The program was used to calculate multicomponent liquid-liquid equilibria and then to generate a ranking of potential extractants in terms of their selectivity for specific condensed volatiles. Additional identified process criteria were then applied to further narrow down the selection. Despite the presence of ethanol at levels 200-800 times that of the other volatiles, with an efficient HBE, 100% recovery could be still achieved by simple single-stage extraction. La recuperación de ciertos aceites de fusel volátiles que pueden ser condensados a partir del gas proveniente de fermentaciones de cerveza se ha efectuado usando extractantes de alto punto de ebullición reciclables (HBEs). La pre-selección de HBEs potenciales se efectuó mediante el uso de un programa de selección de extractantes (ESP). El programa se usó para calcular equilibrio líquido-líquido en multicomponentes para después generar una lista de los extractantes potenciales en términos de su selectividad hacia ciertos volátiles condensables específicos. Adicionalmente, se aplicaron criterios de proceso específicos para reducir más la lista original. A pesar de la presencia de etanol en cantidades 200-800 veces mayor que los otros volátiles, usando un HBE eficiente, recuperaciones del 100% se pudieron lograr con extracciones de un solo paso.
