A new type of bioreactor that uses brewer's yeast strains immobilized in a calcium alginate gel has been developed. This bioreactor permits rapid batch production of beer or ale using any yeast strain. The system can be used with almost any conventional fermenting tank. The method for producing yeast beads and the factors influencing the activity of the beads are described, and the advantages to the brewer in using this bioreactor are discussed.
