If a protein residual or biofilm remains on a vessel or line after the detergent cycle of CIP, the disinfectant/sanitizer stage is the last opportunity to remove this microbial nutrient source. A novel method to compare the capabilities of various disinfectants for removal of protein residuals is presented. A uniform film of protein was incorporated into pores of a microfiltration membrane and onto its surface. The protein deposition and its subsequent removal by disinfectant solution were easily demonstrated by use of permeate filtration rate data. Seven different solutions were studied and compared to a caustic reference run and distilled water control run. The repeatability of the procedure also is discussed.
