Calculation of a Mass Balance in a Malt Extract Analysis. M. Moll, D. Leclerc, J. A. Dodds, and G. Baluais. J. Am. Soc. Brew. Chem. 51:0045, 1993.

In previous articles, we described an apparatus giving malt extract evaluation closer to that found in industrial brewhouse practice. In this article, we present a detailed mass-balance calculation based on the Tepral mashing and mash-separation method. It is emphasized that a modern process engineering approach allows precise evaluation of the mass balance, especially in laboratory mash separation. A numerical example is fully detailed to show how laboratory data can be used for process evaluation.
