Practical Application of Fluorescent Seed-Analysis Systems in a Commercial Malthouse. G. C. Gibbons, S. Aa. Jensen, S. Aastrup, T. Guildal, G. Olsen, and J. Damstrup. J. Am. Soc. Brew. Chem. 41:0117, 1983.

The recently described Calcofluor™ method for the evaluation of malt modification during malting was evaluated in a commercial malthouse. The influence of sampling on the modification values obtained was statistically tested. Recommendations for a reproducible sampling technique are given. The results indicate that the described green malt-modification test, employing a Malt Modification Analyzer, can be used successfully on a commercial scale to follow the progress of malting in individual germination chambers. The use of fluorescein-dibutyrate staining as a rapid and sensitive alternative to the presently used starch-agar test for preharvest sprouting is described. A comparative study between the new technique and the existing standard test reveals the usefulness of this rapid fluorescence method.
