High performance liquid chromatography (HPLC) has become an important analytical tool for the brewing industry. The basic HPLC system is discussed in detail, including current trends in column technology and detectors. Applications dealing with the separation, identification, and quantitation of nonvolatile components of beer, wort, and brewing ingredients are cited. Carbohydrates, hop acids, polyphenols, and proteins are among the most frequently analyzed compounds.
