The Effect of Isohumulone/Isocohumulone Ratio on Beer Head Retention. David W. Diffor, Sam T. Likens, Arthur J. Rehberger, and Ronald J. Burkhardt. J. Am. Soc. Brew. Chem. 36:0063, 1978.

The effect of the isohumulone/isocohumulone ratio on beer head retention was investigated through pilot brewing trials using hops of different cohumulone content, isomerized hop extracts of different isocohumulone content and purified isohumulone and isocohumulone. Foam tests indicated that as the isohumulone/isocohumulone ratio was increased in beers with equivalent BU, the foam retention increased.

Keywords: Beer foam, Cohumulone, Humulone, Isocohumulone, Isohumulone.
