We have evaluated a hydrogen sulfide (H(2)S) analyzer equipped with a gas-permeable tube as a possible method for the rapid determination of H(2)S in beer (HSA method). The H(2)S analyzer responded strongly to H(2)S and very weakly to other volatile compounds in beer, indicating that the selective determination of H(2)S is possible. Repeatability studies showed that the coefficient of variation for the HSA method was 0-8%. Recovery studies showed that H(2)S recovery using the HSA method was approximately 100%. These results indicated that the H(2)S concentration can be determined with a high degree of accuracy using the HSA method. Furthermore, the HSA method is very simple and only requires 5 min/sample for the analysis. Keywords: Beer analysis, Gas-permeable, Sulfur compounds, Volatile.


Hemos evaluado el analizador de sulfuro de hidrogeno (H(2)S) equipado con un tubo gas-permeable como un posible método para la determinación de H(2)S en cerveza (método HSA). El analizador de H(2)S reacciona fuertemente con H(2)S en cerveza y muy debilmente con otros compuestos relacionados con el sabor, indicando que la determinación selectiva de H(2)S es posible. Repetidos estudios mostraron que los coeficientes de variación fueron satisfactorios y comparables con aquellos obtenidos usando el método colorimétrico, al cual nos referimos como método azul de metileno (método MB). Estudios de recuperación mostraron que la recuperación de H(2)S fue también satisfactoria y fueron comparables a aquellos obtenidos usando el método MB. Esos resultados indican que la concentración de H(2)S puede ser determinada por el método HSA con un alto grado de precisión. Además el método HSA es mas práctico que el método MB y reduce el tiempo requerido para análisis.
